Scientists at the University of St. Petersburg Veterinary Medicine have successfully modified the genome of chickens to produce eggs free from the protein that causes allergies. According to the source, approximately 2% of children suffer from an allergy to egg proteins.
The protein known as "ovomucoid" is the primary cause of this type of allergy, as it is not affected by cooking processes such as boiling or frying. The university's scientists were able to modify the birds' genome in order to address this problem.
